Christnas Vegetable Quiche

4 eggs room temp separate white from yolks

In a Measuring cup:
1/8 cup white wine
1/2 cup milk
Rest in heavy cream to make 2 cups
To the liquid add 1 packet Lipton Vegetable Soup Mix

Chop fine one medium onion and 2 cloves of Garlic
Chop coursely fresh mushrooms to yield 3/4 cup

Sautee on low mushrooms and onions in 3 tablespoons butter until onions are translucent and mushrooms have sweated. Cool in the pan.

8 to 10 oz swiss cheese or other grated cheese or combination thereof

On nine inch unbaked pie shell (better to make your own)

Whip egg whites set aside

Beat with fork the yolks into the liquid stuff and the packet of vegetable soup mix.

Add 2 teaspoons cornstarch to the liquid and whisk until smooth

Add the mushroom and onion mixture that has cooled to the liquid

Beat egge whites stiff - fold in liquid a little at a time alternating with cheese.

Pour into pie shell

Bake preheated 350 over for about 40 min.

Cool before you slice
