Dilly Salad Slaw Mold
Pulled from an internet site, I did make this salad and I think there is too much pickle and pickle juice in it as it tasted too vinegary for me. I would not add the pickle juice because lemon juice is enough (ugh makes me pucker just thinking of it). Also, I did not use pickle slices I used chopped dill pickles and it was good.
I used an entire bag of already shedded slaw and it was a good thing.
Bottom line the salad is refreshing cut out most of the pickle stuff, do use sugar free jello, real slaw has not all this pickle mess I would add also celery seeds, pehaps some fruit juice in place of pickle juice like: orange or pineapple.

My mom has been making this jellied salad for YEARS!! It is by far the most often requested jellied salad. Delicious for any holiday or as a cool summer salad. Sugar-free (light) Jello works well for this salad. Cooking time is the setting time.
1 (3 ounce) package sugar-free lemon Jell-O powder
1 (3 ounce) package light lime jelly powder
2 1/4 cups boiling water
1/2 cup pickle juice, strained (to remove any seeds, garlic..)
2 tablespoons lemon juice
1/16 teaspoon ground pepper (basically a "pinch")
1/4 cup dill pickle slices
1 cup low-fat mayonnaise or whipped light salad dressing
3 1/2 cups cabbage, chopped
1/2 cup carrots, grated
1/3 cup pickles, chopped
10-12 servings Change size or US/metric
Change to: servings US Metric
