Cranberry Relish

3 or 4 packages of fresh cranberries
half a cup or more of maple or agave syrup
half cup sugar
half cup Splenda
(sweeten to taste)

grated ginger (optional)

rind and juice of at least one orange and one lemon (can use more to taste)
You do not need water with this the cranberried will pop and then become liquid.

About 10 oz of walnuts or pecans or almonds (slivered)

Variations: can add a little white wine or rum or bourbon, can add finely chopped pickled or fresh jalapenos, I added bacon to the jalapeno version one year and it was good. You can also use this recipe for chutney but if you do then you add curry spices and a little salt. You can also had some chopped up Indian mango or lemon pickle.
