Lima Bean Casserole
Recipe - Mom's Lima Bean Casserole
Ingredients
1 - 1 1/2 Lbs. Large Lima Beans (Soaked, cooked and drained)
1 - 1 1/2 Lbs. Bacon (fried crisp and broken up)
1 Cup Dark Brown Sugar
1 8 oz. can Tomato Sauce
1 Medium Onion
Instructions
1. Soak limas and cook according to directions until just tender. Season to taste while cooking. Drain and set aside. I generally put in a couple bay leaves and a dash or two of hot sauce.
2. Cook bacon until brown and crisp. Break or cut the bacon up and set aside.
3. Drain most of the grease out of the bacon pan.
4. Chop onion and sauté in the remaining bacon grease until lightly browned. Add brown sugar and cook till sugar is dissolved.
5. Add can of tomato sauce. Season to taste. (I usually add Worcestershire and hot sauce. Add bacon and cook for about five or ten minutes until flavors blend.
6. Pre-heat oven to 350. Mix sauce and beans together. Put in a baking dish and bake for about an hour.
Mom used to make this recipe for pot lucks and family gatherings. I bring it all the time myself. Everyone always wants the recipe.
