OAT CAKE WITH PECAN COCONUT ICING
1 1/4 cup oatmeal
3/4 cup butter
1 1/2 cups water, boiling
2 eggs, beaten
1 cup white sugar
1 cup brown sugar
1 1/2 cups flour, sifted
1 teaspoon cinnamon
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon nutmeg
Frosting
1 cup brown sugar
4 tablespoons milk
6 tablespoons butter
1 cup coconut
1/2 cup nutmeats (optional)
1. In pan boil water add butter; stir in oatmeal and let stand 20 minutes.
2. Pour into mixer bowl and add eggs and the first two sugars; mix.
3. Add flour, cinnamon, baking soda, salt and nutmeg.
4. Mix well.
5. Put into a 9x13-inch pan.
6. Bake at 350 degrees for 35 to 40 minutes.
7. Frosting------------.
8. Boil the three ingredients for the frosting for 1 minute.
9. Add coconut and nutmeat.
10. Let stand.
11. When you take cake from oven put the frosting on cake.
