Pimento Cheese

Pimento Cheese:

I get pre-grated cheeses and usually I use a mix of yellow and white Jack cheeses - mild cheese is best - yesterday I used grated Munster from HEB.

3 or 4 cups cheese
1/2 cup mayonnaise (real Hellman's) you may need more but start with half a cup
1 tablespoon onion chopped really find or grated
2 or 3 tablespoons Dill relish - to taste
Tony Cachery's Seasoning to taste
1 teaspoon Worchestershire Sauce
1/2 pickle Jalapeno chopped fine (or more)
1 Rib Celery chopped fine (or more)
3 chopped eggs
1 small jar chopped red pimentos

MIx and adjust to your taste

It is better if you can cover it and let it sit in the fridge for an hour or more.
