Kolache

Kolache



1 oz. yeast

2-3 Tablespoons sugar

1/2 cup lukewarm water



Put yeast, sugar and water in a bowl, mix and set aside



In a larger bowl mix:

1/2 cup melted butter

2 cups warm milk

1/2 tablespoon salt

3/4 cup sugar

6 beaten egg yolks



mix all these ingredients with a whisk



Into this mixture add approximately 6 cups of flour, a little at a time, when approximately 1/2 the flour has been added, add the yeast mixture, and then continue adding the rest of the flour until you have a very soft, almost runny dough. Cover and let this rise in a warm, draft free area, for about 1 to 1-1/2 hours.

Put flour on a cotton cloth, dip the dough out of the bowl 1 cup at a time. Divide this cup and roll into balls, brush with melted butter, make an indentation in the center, and add a heaping teaspoon of your favorite filling -- poppy seed, apricot, cherry, prune, cheese, whatever.



TOPPING:



Flour

sugar

melted butter



mix together to make a struessel-like topping and sprinkle on the kolache.



Bake for 15-20 minutes in a 350 degree F oven. When they come out of the oven, brush with melted butter. Be sure to bake these on the top rack of your oven so that they don't burn on the bottom.



Lots of work, but boy are these worth it!
