Gov. of Maryland Mrs. Tawes Crab Cakes

Governor Tawes was governor of Maryland in the 1950's this is supposed to be his wife's crab cake recipe. The idea of real Maryland crab cakes is you want big lumps of crab meat in as little breading as possible.

1 pound picked crab meat be sure shells are out
2 raw eggs
2 teaspoons mayonnaise (Hellmans regular)
1 teaspoon horseradish mustard (I do not like mustard in mine but this is her recipe)
1/4 teaspoon salt
Cracked pepper to taste
1 teaspoon chopped parselty
dash of tabasco sauce

combine ingredients including the unbeaten eggs. Mix lightly so you do not separate the lumps of crab meat. Make into cakes

Roll out a package of crackers to make cracker crumbs (do not used the package crumbs)

Pat cracker crumbs lightly on the cakes fry in deep fat remove as soon as they are golden brown drain on paper towels.

1/2 teaspoon Old Bay seasoning can be added if you wish.

Sometimes people add fine chopped celery, green pepper or pimento red pepper and fine chopped onion or green onion. Also can add some capers.
