Grannie's & Stella's Hot water corn pones
1.5 cups yellow corn meal
1 teaspoon salt
boiling water
Add cornmeal and salt
Be heating a cast iron skillet halfway filled with corn oil or crisco. Mom and Grannie always used Crisco.
Pu cornmeal and salt in a bowl add boiling water so it looks like a really thick cornmeal mush and you can handle it. Putting you hands under cold water shape the round pones or oval pones about 3 inches round and about 3/4 inch thick. Place into hot bubbling oil fry on one side turn heat down to medium and turn. Keep turning and frying until they are golden. You can cover them for a spell. The trick is you want them solid cooked in the middle and crunchy golden brown yellow outside. This is not easy but it is well worth the time. Fabulous with red beans, cooked turnip or mustard or any sort of greens. A real treat in my family. My Mother, Miss Stella Mae, was the only one to learn from my Father's Mother, Grannie, how to make these and it is almost a lost art.
