Fresh Peach Cobbler
1 quart sliced peeled peaches about 1.5 pounds ( dip peaches in boiling water for a few minutes in order to peel easily)
Can use frozen sliced peaches that have been thawed
1 cup sugar
1 cup flour
1 teaspoon baking powder
1/8 teaspoon salt
1/4 cup butter
1 large egg
3 tablespoons milk
1/4 teaspoon vanilla
in 1.5 quart oblong glass baking disk mix peaches and half cup of sugar. In a mixing bowl sift flour, baking powder and salt. With a pastry blender blend butter into the flour mixture like for biscuits.
In a small mixing bowl beat egg and 1/2 cup sugar, beat in milk and vanilla.
Fold flour mixture into egg milk mixture and spread over peaches.
Bake in preheated oven 375 degrees about 45 minutes. or until cake tester (toothpick) comes out clean
Serve warm with vanilla ice cream
