Uncle Willy's Pimento Cheese

1.5 pounds sharp yellow rat trap cheese or cheddar grated
2 - 4 ounce jars pimentoes
2 large boiled eggs chopped
2.5 dill pickles chopped
1 lemon juice
1 teaspoons worchestershire sauce
5 tablespoons Hellman's Mayonnaise or more
1/4 teaspoon fine red cayenne pepper
1 chopped seeded pickled jalapeno pepper
half a grated onion

Salt & black pepper to taste
